Here in Texas, we're not very accustomed to cold, autumn nights. On Monday, one of my girlfriends from church and I decided to get together and make an simple, cozy dinner to counteract the bitter chill of the evening. King Ranch Chicken is one of my family's favorite recipes. As soon as I walked into her warm home with this round casserole dish, she fell in love with it immediately and said, "Oh my gosh, I need one of those!"
As we diced vegetables and shredded chicken, she kept going on about how nice it would be to have a casserole dish to cook with that also made transportation and presentation so simple.
After 30 minutes in the oven, my casserole was ready to go. None of the ingredients stuck to the sides of the dish and the top of the casserole was perfectly browned and lightly crispy. I served big spoonfuls right out of the dish with no problem at all. The lid to the dish made it easy to store the leftovers in the fridge. (The less I have to deal with cling wrap, the better.)
This dish is a great asset to my kitchen, and I'm looking forward to bringing it to many parties and family gatherings in the future!
